Dried Vegetable Equivalents to be Used in Cooking

Here is a chart of dried vegetable equivalents to be used in cooking.

Fresh Produce Dry Equivalents
one onion 11/2 tablespoons onion powder
  1/4 cup dried minced onions
one green pepper 1/4 cup green pepper flakes
1 cup carrots 4 tablespoons powdered carrots
  1/2 cup dried carrots
one cup spinach 2-3 tablespoons powdered spinach
one medium tomato 1 tablespoon powdered tomato
1/2 cup tomato puree 1 tablespoon powdered tomatoes
   

 

Vegetable flakes and powders are easy to make.

Vegetable flakes can be made by crushing dehydrated vegetables or vegetable leather using a rolling pin of a wooden mallet or even your hand.

Powders are finer than flakes and can be made by using a food mill, processer or blender.  If you have no electricity, you can use a mortar and pestle.  The most common powders are onion, celery and tomato.  Powders take less room to store.

  1. I’ve been dehydrating vegetables all summer. Anything I can grow or otherwise get my hands on. I now have almost a quart of approx 15 vegetables that I have ground into powder using an electric coffee mill. My husband had 10 hour stage 4 head and neck cancer surgery in Jan 2006 and since chemo and radiation his lower teeth have all fallen out but 3. His jaw is going to self fracture at some point in the near future and our med supp refuses to pay to fix it. I plan to use the vegetable powder anyway I can to get the nourishment he needs. Anxious for fall to be able to use it in soups, etc. Maybe sharing this will help other cancer survivors that have had the same issues. Thank You!

Let me say how sorry I am to hear about your husband, but if you can get the vitamins and minerals he needs to survive, kudos to you for using your talents to fix what he needs. I have elderly in laws that need more vegetables and this works well for them in their scrambled eggs and caseroles what ever I fix for them. Just sprinkle on , like salt or pepper. Good luck to your husband and we will keep him and others like him in our prayers.
