Bean information and Taco Soup Recipe.

We were in Utah visiting how daughter and she always has some great dinners, so of course I come home with the recipes. And I learned something else that I wasn’t aware of after all my years of eating and cooking them. Beans, can cause intestinal irritation and that if you include beans a lot in your meals, it’s important that you drink a lot of water or other liquids and exercise so our system can handle the increased fiber.

One way you can prevent some of the discomfort is by changing the soaking water several times. You can also parboil the beans by adding twice as much water as beans. Bring the water to boil and boil for 3-5 minutes. Drain and rinse the beans and then continue with the soaking process.

Here is a recipe she made that was delicious; am sure a lot of you have made and have different recipes for it, but this was so easy and ready when we got home, I thought you might like it. You can replace your own canned beans with recipes which would have less salt.

Taco Soup

1 pound hamburger or chicken
1 package ranch dressing mix
1 package taco seasoning
1 15 ounce can black beans
1 15 ounce can red kidney beans
1 15 ounce can pinto beans
1 15 ounce can con
1 15 ounce can chopped tomatoes
1 10 ounce can diced tomatoes with green chilies
1 cup water

Brown the hamburger or cook chicken (cut into cubes after cooking) Add taco seasoning mix and add ¾ cup water to the meat mixture. Add the ranch dressing mix and remove from heat
Put all of the above ingredients in a crock pot; add the beans, corn, and tomatoes plus the liquid. You don’t have to drain unless you want to have less salt in your recipe and if you are not using your own canned items. Add 1 cup water and cook for 4 hours in a crock pot.

Serve with taco chips, sour cream and cheese.

I don’t use salt in my recipes and try and limit the use of store bought canned beans. If I do use them I drain and wash them as much as possible. Check the sodium on the labels.
