To Heck with Preparedness

To heck with preparedness, it’s Christmas, get some good eats, relax and enjoy.  Here is a recipe you might enjoy.  I know I will.

BERRY CREAM MUFFIN

  • 4 CUPS ALL-PURPOSE FLOUR
  • 2 CUPS SUGAR
  • 2 TSP. BAKING POWDER
  • 1 TSP. BAKING SODA
  • 1 TSP SALT
  • 3 CUPS FRESH OR FROZEN RASPBERRIES, STRAWBERRIES OR BLUEBERRIES
  • 4 EGGS, LIGHTLY BEATEN
  • 2 CUPS (16OZ) SOUR CREAM
  • 1 CUP VEGETABLE OIL
  • 1 TSP VANILLA

IN A LARGE BOWL, COMBINE FLOUR, SUGAR, BAKING POWDER, SODA AND SALT: ADD BERRIES AND TOSS GENTLY,

COMBINE EGGS, SOUR CREAM, OIL AND VANILLA: MIX WELL. STIR INTO DRY INGREDIENTS JUST UNTIL MOISTENED. FILL GREASED OR PAPER LINED MUFFIN PAN TWO THIRDS FULL.

BAKE AT 400 FOR 20 TO 25 MINUTES OR UNTIL THEY TEST DONE.  MAKES 24 MUFFINS
