Quick Easy to Make Dill Pickles

For years I have been looking for a recipe that a family member gave me when my son was about 7 years old, he will be 50 in June, so I have been looking for a long time.  I obviously have not been looking hard enough. LOL Well any ways I found one similar to it in my canning book and since I have planted some pickles, I thought I had better get busy and find a recipe that is easy.

I love dill pickles but the salt is a problem, since I blow up like a balloon after enjoying one.  Anyway when I made these pickles I was a real novice in canning and I don’t remember putting them in either a pressure cooker or hot water bath.  Have any of you old timers heard of any recipe for pickles  canned this way without using a pressure cooker or hot water bath, or  did I just forget? Let me know, please.

Here is one that I found that maybe someone could use and it sounds easy to do.

Quick Fresh-Packed Dill Pickles

  • 8 Lbs. of 3 to 5 inch pickling cucumbers
  • 2 gallons water
  • 1-1/4 cups canning or pickling salt (divided)
  • 1-1/2 quarts vinegar (5%)
  • 1/4 cup sugar
  • 2 quarts water
  • 2 Tbsp. whole mixed pickling spice
  • about
  • 3 Tbsp. whole mustard seed (1 tsp. per pint jar)
  • about
  • 14 heads of fresh dill (1-1/2 heads per pint jar) or 4-1/2 Tbsp. dill seed (1-1/2 tsp per pint jar)

Makes about 7 to 9 pints

Wash cucumbers, cut a 1/16-inch slice off blossom end and discard, but leave 1/4 inch of stem attached. Dissolve 3/4 cup salt in 2 gallons water.  Pour over cucumbers and let stand 12 hours.  Drain.  Combine vinegar, 1/2 cup salt, sugar and 2 quarts water.  Add the mixed pickling spices tied in a clean white cloth.  Bring to a boil.

Fill hot jars with cucumbers.  Add 1 tsp mustard seed and 1-1/2 heads fresh dill per pint.  Cover with boiling pickling solution, leaving 1/2 inch headspace.  Remove air bubbles and adjust headspace if needed.  Wipe rims of jars with damp cloth.  Adjust lids and process.  Recommended process time for Quick Fresh Pack Dill Pickles in a boiling water bath is 10 minutes for pints or 15 for quarts.

Can’t wait to try this one, it really sounds like the one I did.  If anyone has other pickling recipes that are quick, let us know.
